Sticky Treat

Thursday, March 18, 2010

This is probably one of my ALL-TIME favorite treats. But really? Can you pick and choose between mouthwatering sugary goodness? Most treats are my favorite things to eat which is why I shouldn't make them...but that my friends, is a whole other post that should relate somehow to exercising, which I know I don't do enough of!But this treat, is really SO good. It is so good that I have not heard of a single person not liking it. I got the recipe from a good friend of mine who I like to call, The Treat Queen. I have a treat cupboard in my house but it rarely compares to that of the Treat Queens. She could bust out desserts for me all day long and I could just sit and devour them, her recipes are that good! So are you all dying to make this now?? If not, you should be!! The sad thing is that I have this recipe memorized, that is how often I make it!

Sticky Puffed Corn
1 cube butter
1 cup sugar
2/3 cup karo syrup
1 1/2 bags of puffed corn

Measure out puffed corn in a large bowl and set aside. Combine the rest of the ingredients in a medium sized pan on the stove. Stir until it boils for 1 1/2 minutes. Pour immediately over puffed corn and stir until evenly coated. Let cool. Devour! In case you are wondering what in the heck puffed corn is. Here ya go:You can find it by the chips. I recommend picking up at least a couple bags of these every time you go to the store. Or at least that is what I live by! Enjoy!!

Make your own wipes

Wednesday, March 17, 2010

I know that baby wipes is probably not the most interesting thing to blog about, but I consider it to be a frugal tip. I know not everyone knows about this so I wanted to pass this little gem along. Besides, when you are changing diapers day in and day out, its nice to save some moolah.
I make my own wipes. Why? Because it's easy and cheap. Yes, I do love Huggies wipes but at $5-7 a pop for not that big of a container, it is just out of my student budget. In fact, it is out of my budget altogether. I refuse to pay gobs of money for something that will wipe a baby tush and be thrown away. I would much rather save my money for things I enjoy like...crafting!

Baby Wipes:
1 Roll of Bounty cut in half with non-serrated knife
1 T Baby oil
2 T Baby bath soap
2 1/2 C Water

Mix water, baby bath, and oil in bottom of container. Put Bounty in container, put lid on, then turn upside down until all liquid is absorbed (usually about 10 minutes.) Turn back over, remove cardboard core and start using from the middle.

That was the original recipe. I have gotten a bit lazy now so I really don't measure it out anymore. I just put a squeeze of baby oil in one corner of the container and a squeeze of baby bath soap in the other. Add the water and swish it around with my finger. I find it therapeutic!! I also like to use the Bounty that are already perforated into smaller pieces. Then I just tear them all out and take sections and fold them in half and pile them all in that way. Just do this while you watch Biggest Loser, American Idol, Grey's or another favorite show! It saves me having to cut them which was my least favorite part before. Plus it gives me an excuse to sit and watch TV!! But if you don't want to do the tearing yourself, then just cut it in half with the non-serrated knife. But be careful not to cut yourself!

I bought my wipes container at Walmart. I think it is quart size found over by the kitchen containers. It was $2 for two containers with lids. I thought about taking the mod podge to it the other day but since I wash mine in the dishwasher, I decided to forego cuteness and just go for functionality. The nice thing is I can take these wipes in the hard wipes cases or plastic bags for on the go. I don't worry about using these wipes for wiping hands or faces because they are SO cheap. They are durable though because they are Bounty, you know the quicker picker upper? I buy the Bounty usually at Target when they offer good deals for those big packs. I usually get them for $20-25 when they offer a free $5 gift card too. So that makes them even cheaper! These will last me literally longer than a year. Can't beat that!

Setup Idea

Friday, February 19, 2010

Some of you may remember the 8 week meal plan I have from this post. I finally came up with the "plan" of how to organize it and make it cute for my kitchen but yet still functional. Then we got sick. So the project still lives in my mind but that is about it. Hopefully it will come to life in the next week or two and I can share it with you.

But in the meantime, I saw this today. I thought it was a great idea! They found the idea from Pocket Full of Posies which has a video tutorial on the whole system here. They too are using an 8 week meal plan idea. You pick out 4 weeks worth of meals for the month and put it into your pocket planner. Then they have ingredient lists for each week. I am doing this for my meals too but I don't think mine will be as detailed as theirs. They have it divided up by meat, spices/extras, stock, fresh and frozen. Mine will probably just be an all encompassing list. Anyway, just wanted to share with you all. Cute idea and seems pretty easy to use. I am hoping the one I do is just as easy. I think the easier it is, the more likely you are to stay with it!

The necessities.

Wednesday, January 27, 2010

One of my favorite things to do is eat. There I said it. It is now out there. And anything with sugar and I am all over it. Literally. But as much as I enjoy a great cooked meal, I struggle at making menus for our family. I have found that if I have meals planned, we eat "real" meals (as opposed to the frozen, fake kind!) that are so much healthier for us. I go through stages where I try out different ways to stay on top of it. I did freezer meals for a while which worked great when I had a whole Saturday to devote to cooking. I have also compiled a huge list of meal ideas over the last few years to pick and choose from on a whim. I have tried making menus for a month at a time or a week at a time. They all work for a while but then the end of my menu comes and I am no longer motivated to keep going. Where does all of this motivation go? I am hoping I pass it along to one of you because sometimes I feel like it is flying out of here faster than I can catch it! I hope someone is making good use of it!

So I decided to take the big long list of menu ideas I have and my cookbooks and just hash it all out. I came up with an eight week long menu. I figure after 8 weeks, any of the meals could pretty much be repeated because eating something every 8 weeks or so is definitely doable! I picked super easy meals like pancakes, grilled cheese, etc paired with some more complex (or time consuming) meals. That way if I knew ahead of time that the week was going to be busy, I could just plan the easier meals on a day I didn't have as much time. Or if we have plans to go out or not be at home, I will just skip one of the meals for that week. It is such an easy going meal plan that I am bound and determined to make it work. And since I like to incorporate new ideas too, I have a few weeks where I have planned in a new recipe. This will give me the opportunity to try something new and either add it to the menu or throw that recipe away...why keep it if no one likes it right?!

For now, I just have the meal plans written out on two notepad sheets of paper. I plan on "cutesifying" them and also creating a shopping list with every ingredient needed for the week. I am going to put them in sheet protectors and then use erasable markers to go through the list before going to the store and get rid of all of the things I already have on hand. Won't I be Mrs. Organization!! No worries, you haven't seen my pantry lately, have you??!

We are only a couple weeks into this thing, and I am LOvInG it already! What do you do to make a meal plan? Anyone interested in seeing mine? I can post it if anyone wants to see it and/or get some new recipes. So give me your ideas...I am definitely interested in how you make dinners at your house work for you.

Oh yeah, and on the menu for next week:
Cheesy Potato Soup (tastes like its from a restaurant...I can say this because it isn't my recipe), Crepes, Cobb Salad, Grilled Cheese and Fries, Hawaiian Haystacks, Quesadillas, Spaghetti and Ciabatta Garlic Bread

Is your mouth watering yet?? Mine is! I should never write about food when I am hungry. I think I am going to go get something to eat now....

GoInG NuTs!

Thursday, December 17, 2009

This week has been crazy busy. Not only did I have jury duty (which I got out of pretty quickly), the hubby had his last finals of the semester too. Life has been a madhouse but hopefully it will begin to slow down with the holidays. Hmmm, who am I kidding right??

Well we spent a good 4 hours last night making treats. Let me just tell you a small apartment sized kitchen is not conducive to making lots of treats at once with more than one person in the way. But we had fun and other than the vanilla they forgot to bag at the store, things were going very smoothly considering.

I thought I would share this yummy recipe for those scrumptious spiced mixed nuts that you can buy at sporting events or other random places like that. Well, you can make them for a lot less. They are also a great neighbor gift if you are still looking for something to give. This is really to hold you over until I can get a few of my other craft posts up here. Yep, that is right. I am bribing you with food.

Spicy Mixed Nuts
1 egg white
2 Tbl cold water
1/2 cup sugar
1 1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
2/3 cup walnut halves
2/3 cup pecan halves
2/3 cup whole almonds

Beat egg white and water until frothy. Stir nuts into mixture to coat, then drain slightly in a colander/strainer for about 3-4 minutes. Mix sugar and spices in a plastic bag. (Smells SO heavenly!!) Add nuts and shake in the bag to coat. Spread the wet nut mixture onto a microwave safe plate; microwave on high for 1 1/2 minutes or until its bubbly. (Watch out! It can bubble right off your plate!!) Stir. Microwave another 1 1/2 minutes. Remove and stir separate. When cooled, store in a sealed container. Makes 2 cups.

You can always just do 2 cups of one type of nut. I also tried cashews halves which was pretty darn good. I did spanish peanuts and they were just so so to me. So pretty easy and yummy too. I wonder if we are seeing a trend of all of my microwave usage??! I swear I do cook things outside of that "oven." Enjoy!

Yummy Fast Peanut Brittle

Monday, December 7, 2009

Today, I am joining in the fun over here:

The Girl Creative
Absolutey LoVe her blog!!

One of my favorite Christmas recipes I have been making since I was a kid. It's that easy! Plus it tastes really good too!

Microwave Peanut Brittle
1/2 cup raw peanuts
1 cup sugar
1/2 cup karo syrup
1/2 tsp salt

Cook 7-8 minutes on high in the microwave. Stir once or twice.

Add 1 Tbl margarine. Cook 1 1/2 min. Add 1 tsp vanilla and 1 tsp baking soda. Stir lightly. Pour onto greased cookie sheet. Let harden and then you can break it up into smaller pieces.

*Note if you are going to make more than one batch, either make it in a different bowl or cook for less time. Otherwise the heat of the bowl from the first batch will cause your 2nd batch to burn.

Enjoy!!
